WOW! What a week it has been at the Toronto Downtown campus. On Wednesday, Chef Mick submitted his very special Deep Fried Beer Battered Lobster recipe to the Mad Dog and Billie show at MIX 99.9 FM, where the winner would be awarded with an opportunity to meet Chef Gordon Ramsay. Needless to say Chef Mick smoked them all and walked away the winner of the recipe competition. Mad Dog was absolutely drooling as he consumed the entire platter of Deep Fried Beer Battered Lobster and the special tarter sauce, sweet potato frites, coleslaw and of course the all important Corona. The highlight of the week was Chef Mick and Chef Ana Paula Elliott – Directors of the Toronto Downtown and the Durham Region Campuses meeting Chef Gordon Ramsay at the MIX 99.9 FM station. It was a great honour to meet one of the “real” top Chef’s of the world – nine Michelin stars and restaurants in England, Tokyo, New York, Ireland, Dubai and Paris. We also hear that during Chef Ramsay’s visit to Toronto he has made no secret of the fact that he is actively researching opportunities of opening a restaurant in Toronto. How great would that be? What could be better than training at Liaison College with an eye towards working in one of the top establishments in the industry?  Left to Right - Chef Mick Elliott, Chef Gordon Ramsay, Chef Ana Paula Elliott CHEF MICK’S Winning Recipe Deep Fried Beer Battered Lobster Ingredients 2 ½ cups AP flour 1 ½ cups corn starch ¼ cup sugar ¼ cup baking powder 2 cans beer (preferably Guinness) 4 Tiger Lobster Tails 1 lb butter - clarified Method Batter: Mix together all dry ingredients Add the beer and mix thoroughly Cover and let sit in frig for 1 hour Lobster: Peel and clean Lobster Lightly poach in clarified butter for 2 minutes Cool slightly and the coat with the batter Deep fry at 350F until golden brown Enjoy with your favourite tarter sauce, chips and cole slaw. And don’t forget the Corona and lime! |
